I am in the restaurant business and work for a largw chain... although many procedures and policies are inaccurate for a chain there is a lot of truth in many others. the book is a great read about realtionships and the bond a General Manager has with his crew and his restaurant who he spends more time with than his family. The book points out that loyalty goes up from the dishwasher to the GM and back down but from the restaurant level to the corporate level it only goes up. Great read recommend it highly as the characters all very diverse are real and you find this out through actions not reading patagraphs of discriptions.Anonymousnoreply@blogger.com
